4 Refreshing Drinks For A Hot And Sunny Day

"Hot and sunny" pretty much characterise most of the days experienced in Singapore's tropical climate. Rather than always relying on air conditioning to beat the heat, here are 4 refreshing drink recipes that will certainly help you to cool down in this sweltering heat!

1. Strawberry and kiwi frozen Mojito

What you'll need: 

  • Blender
  • Measuring cups 
  • Measuring spoons 
  • 3 glasses
  • 1 ½ cups chopped strawberries, frozen
  • 1 ½ cups chopped kiwi, frozen
  • 3 tbsp simple syrup, divided 
  • 8 fresh mint leaves, divided
  • Optional: 2 shots of rum, divided 
  • 3 ½ cups crushed ice, divided
  • Strawberry and kiwi slices, to garnish
  • Mint leaves, to garnish

Method: 

  1. In a blender, combine the frozen strawberries, 1.5 tbsp simple syrup, 4 mint leaves, 1 shot of rum, and 1 3/4 cups of crushed ice (if you have whole cubes, crush them in the blender first). Blend until well combined and slushy-like.
  2. Pour the strawberry mojito into 3 glasses, filling half-way.
  3. Rinse out the blender jug and combine the remaining chopped kiwi, 1.5 tbsp simple syrup, mint leaves, 1 shot of rum, and crushed ice. Blend to desired consistency.
  4. Pour the kiwi mojito over the strawberry mojito.
  5. Garnish with kiwi, strawberry, and mint.
  6. Serve immediately.

2. Strawberry limeade

What you'll need: 

Method: 

  1. To make a simple syrup, combine the sugar and water in a saucepan, and cook over medium high heat for 5-10 minutes until the sugar is dissolved and the liquid is clear.
  2. In a large jug, combine the lime juice, simple syrup, strawberries, mint, and water. Let sit in the refrigerator for 2-3 hours. Serve and enjoy!

3. Roasted peach and strawberry fizz

What you'll need: 

Method: 

  1. Preheat the oven to 175 °C.
  2. Cut peaches in half and remove the pit. Cut strawberries in half. Place the fruit on a baking tray lined with baking paper and roast for 25 minutes.
  3. Take the tray out and leave to cool for 10 minutes or more.
  4. Remove the skins from peaches and blend the flesh together with apple juice in a blender to get a smooth pureé.
  5. Blend the strawberries separately.
  6. Divide the strawberry pureé into 6 glasses and add ice. Pour the peach and apple juice mixture over ice and add sparkling water.
  7. Serve immediately.

4. Strawberry banana smoothie

What you'll need: 

  • Blender
  • Measuring cups 
  • Measuring spoons 
  • 1 ½ cup raspberries
  • 1 cup strawberries
  • 1/2 frozen banana
  • 1 cup milk of choice (e.g. almond milk, oat milk)
  • 1 tbsp honey or maple syrup
  • 1 ½ cups ice
  • Handful of mint or basil, optional

Method: 

  • Combine the raspberries, strawberries, banana, milk, honey or maple syrup, basil (if using) and ice in a blender. Blend until smooth.
  • Once mixture is smooth, taste it. If it's too sour, add another 1/2 cup or so of milk and another tablespoon of honey or maple and blend once more, before serving.
