Types of Pots & Pans
Cast Iron: Cast iron retains heat well and for a longer period of time but the maintenance of this beautiful piece of cookware is not to be overlooked. Without maintenance, your cast iron can still be used, but before you use it you will have to take a while to clean it. The best way is to clean and season your cast iron after each use. To season it, heat it up on the stovetop until it is smoking hot, before rubbing a little oil onto the surface and letting it cool. Repeat this process several times and you're good to go. You can also clean your cast iron by washing it with soap and water.
Stainless Steel: What about stainless steel? They are easy to clean, easy to maintain, but will not get as hot as cast iron in terms of cooking. Some prefer stainless steel cookware because of their colour! It is easy to see what is burning and what is not on stainless steel cookware than on cast iron, which is usually black.
Marble Stone: Like most cookware these days, marble stone is also non-stick as well! However, unlike other non-stick cookware, marble stone is non-stick due to the marble coated inner surface, which makes it abrasion-resistant as well.
Ceramic: Affordable for any budget, ceramic cookware is non-reactive and non-toxic because it doesn't contain any metals. Did we mention it is non-stick as well?
Induction: Induction cookware is used for induction cookers, which are faster and more energy-efficient than a regular stove hob. Induction heating also directly heats the pot, which means heat isn't lost to the environment, unlike traditional stovetops. However, induction cookers won't be able to produce the wok hei taste of your char kway teow!
